The 2012 Plata agave was harvested from our "el refugio" estate is located 2,055 meters above sea level and named for the town nearby. It is approximately 7 hectacres with 20,336 agave plants. As one of the highest elevation estates it has high temps of 24.8 C and lows at 9.1 C, making for the extremely high sugar content in the agave plant. Nose: Sweet molasses, butterscotch and ripe agave. It opens up to cooked pumpkin and hints of peppermint. Palate: Fresh, lively, round sweetness, subtle tropical fruits, and some cinnamon.
